The Story of Geisha
Geisha coffee varietal was discovered by Price and Daniel Peterson on their coffee farm back in 1996. They found tall, odd-looking coffee trees that thrived in high altitudes where other coffees struggled. When they entered their first harvest into the Best of Panama competition in 2004, the coffee cupped 94.6 out of possible 100 and sold for an unprecedented price.
The world of specialty coffee was enchanted by the stunning Geisha varietal and it quickly became a sensation. World’s most expensive coffee renowned for its fragrant fruity and tea-like flavours was once just an ugly scraggly tree no one liked.

Esmeralda Special Auction
Hacienda La Esmeralda has been owned by the Peterson Family since 1987. The estate runs their annual highly anticipated online auction offering their most extraordinary geisha coffees with cupping scores of over 90 points.
Our naturally processed Cabaña lot was grown at the estate’s farm Cañas Verdes located at high altitudes between 1600 - 1800 masl that produces coffees that keep setting world auction records. They are highly priced for their unique floral and citrus notes and high complexity in the cup.

BREWING RECIPE
To extract all the delicate flavours geisha offers, we highly recommend pour over with the following brewing settings:
Ratio: 1:16
Coffee: 16g Medium grind
Water: 260g @ 97°C
Time: 2:30min
Step 1: Pre-wet the paper filter and add 16g of freshly ground coffee to the dripper.
Step 2: Saturate the coffee with 50g water evenly and allow it to bloom for 30s.
Step 3: Continue pouring water in circular motion (3x pours of 70g) until you reach the 260g on your scales.
You’ll be able to get 3 brews out of this package. The only hard thing will be to decide whether you want to share any of it.
