Citrus Sherbet, Cherry Cola, Vanilla, Black Tea, Plum Pudding
Tessema Edima produces enough coffee cherries on his own block of land to have them processed separately and sold carrying his name. A true single origin from Ethiopia, where coffee is community-grown! This cup has exceptional clarity of flavours and a body full of complex notes of cherry cola and black tea, with a sparkling sherbet acidity and a plum pudding mouthfeel.
Gedeo Zone, Yirgacheffe
Tessema Edima comes from a long line of Yirgacheffe coffee producers who grow coffee and false banana in semi-wild conditions.
100% of this coffee grows on his 5ha block of land, in the same soil and getting the same treatment, which enhances the flavour profile. He delivers only the ripest cherries to Aricha washing station where they are kept separate from other collected coffee. Before depulping, the cherries are separated using two water channels and immersed in fermentation tanks for 72 hours. The coffee is then dried on elevated African beds.
Filter coffee lovers will appreciate the lighter roast and the sparkling sherbet-like acidity.
